To optimize the header you need to go to the following tabs:
Magento 1: go to System > Configuration > Design > HTML Head;
Magento 2: go to Content > Configuration > Design > Select Store > HTML Head;

Default Page Title – The default title tag that will be used for pages without a custom title.
Page Title Prefix : A prefix that can be added to the default title. It is recommended that this is left blank.

Default Description – The default description meta tag that will be used for pages without a custom meta description.
Default Meta Keywords : the default meta keywords tag . It is recommended not to fill it in.
Scripts and Style Sheets : in this field you can enter one or more scripts, which will be inserted just before the header closes, such as the Google Analytics script ;
